I know that its likely to be on Steam since it says that its getting a PC release on the homepage, but will it be on GOG and/or Itch.io? Those are the main ones I see it finding a home on as opposed to Nutaku, MangaGamer, dlsite, etc. Trying to rely on Steam less for game purchases.

Thats up to the publisher. So far we have no information about which sites/services will be used.
